Ingredients
1 jar of Robertson’s Fruit Mince or similar
1.5 cups plain flour
125g unsalted butter, chopped
1/4 cup icing sugar
1/2 tsp salt
1 tsp ground cardamom
1-2 tbs ice cold water
Method
Sift together the flour, icing sugar, cardamom and salt.
Add the chopped butter
Work the butter through the flour with a pastry mixer, this way the butter stays nice and cool.
Very slowly add little dribbles of ice cold water to the mixture and combine, or press together till it starts to form a ball.
Knead slightly to a flat disc shape and then place, covered in the fridge for 30 mins
Pre heat the oven to 190°C / 375°F
Lightly grease a tart tray.
Roll out the pastry and then press into the tray.
Spoon in a tablespoon or so of the fruit mince filling and then cover with your choice of lid.
Brush the tops of the pies with either melted butter or a beaten egg and sprinkle with white sugar.
Cook in the oven for 20-30 minutes or till the pastry is lightly browned.
Serve warm or cold. They make fantastic gifts also.
