This Finnish version of apple cake doesn’t seem to be too different from a standard cake, maybe apart from the sour cream, but it certainly is a delicious treat and this particular recipe is now next to my Pulla recipe for sweet treat recipes to have on hand.
Overall, this isn’t an overly sweet dessert and the texture is soft, moist and dense without being too heavy.
INGREDIENTS
150g white sugar
100g butter, softened
1 egg, beaten
200g plain flour
2 tsp baking powder
150g sour cream
Apple topping:
5 apples, peeled and thinly sliced
1/4 cup brown sugar
2 tsp cinnamon
Method
Pre heat oven to 170°C/335°F
Spray 6 individual pie tins with oil and set aside.
Whisk together the butter and sugar in a large bowl till light and fluffy.
Add the egg and sour cream mix till combined then set aside.
Peel, core and slice the apples and set aside.
Mix together the brown sugar and cinnamon and set aside.
Add the flour and baking powder to the sour cream mixture and stir till just combined. Do not over mix.
Pour the batter into the pie tins. Push the apple pieces into the batter and then sprinkle over the cinnamon sugar.
Cook in the oven for 45 minutes or till cooked through.
