Mum’s Indian Chicken Curry – This recipe has been part of my mum’s food repertoire for years, decades even. It’s one of those dishes that is made to feed an army of friends and family.

As friends gather for a week away in a beautiful house in the country somewhere, turning up sporadically throughout the day, they will be welcomed with the delicious, warming aroma of this Chicken Curry that has been whipped up and ready to reheat as needed.

I make it with a lovely amount of gravy that is just perfect to be mopped up with some freshly cooked flat bread. The chicken I use is the chicken cutlet, which is the thigh with the bone left in. After the chicken has cooked I just remove the bone and pull the chicken into large shredded chunks but you can use a whole chicken cut up or breast or thighs without the bone, it’s entirely up to you.

Tamarind Glazed Pork Ribs – Who doesn’t love ribs? Especially when they have been slowly cooked so they just fall apart in your mouth. Team that with a sweet, tangy slightly salty glaze and you will be in pork rib heaven with this delicious recipe.

Along with the glaze, the spice rub has the two most perfect spices for pork and they are cumin and fennel. I love to keep them whole for this recipe as they are little bursts of flavour that complement the fattiness of the pork.

Roasted Pumpkin, Spinach, Feta & Ricotta Rolls – I love these so much that I make a big batch of them and freeze them for lunches. They work really well as a dinner also. Rather than cutting them in half or thirds, leave them the full size and serve with a crisp garden salad and a zingy dressing.

These veggie rolls are packed full of delicious clean and fresh flavours so you don’t need to add extra spices, but you can serve them with a variety of spicy chutneys and sauces to change it up if you choose.

Omenakakku – Mini Finnish Apple Cakes – Last weekend I found a bag of mixed apples in the fridge. Like a blank canvas the ideas started flowing. Maybe a crumble, crepes or a pie, I just couldn’t decide. Asking around I got strudel, apple sandwiches and crumble again. So many choices! Finally I decided to go back to my roots and whip up a Finnish Apple Cake.

The Finnish version doesn’t seem to be too different to a standard cake, maybe apart from the sour cream, but it certainly is a delicious treat and this particular recipe is now next to my Pulla recipe for sweet treat recipes to have on hand.

Overall, this isn’t an overly sweet dessert and the texture is soft, moist and dense without being too heavy.

Sweet Potato Toast w/ Mushroom & Brown Mustard Seed Omelette – Is a breakfast to take you through the day. Absolutely perfect for a long day at Disnelyland, as I was discussing in an earlier post.

The hottest food trend to sweep the internet at the moment is sweet potato toasts. Who knew? You take a thinly sliced slab of sweet potato, brush with a bit of oil and pop in the toaster. If you have a crumpet setting on your toaster then that will work perfectly, other wise popping it down a couple of times is just as good.

Cooking the sweet potato to al dente means it’s an ideal plate for poached eggs, omelettes, sautéed vegetables etc.

Simple Pan Fried Cabanossi – is just a quick, whip up in an emergency type dish for when friends drop in for a drink. Especially when it’s footy night!

I love pan fried sausage, especially kansky with a hot English mustard, surprisingly it reminds me of camping with my family when I was young and mum would make these around the camp fire.

All you need to do is thickly slice your chosen sausage, brown one side in a medium hot pan and then turn over. Simple!

Serve with a variety of delicious mustards and sauces, your guests will love it.

Childhood flashbacks are so wonderful 🙂
