This recipe comes direct from one of my most favourite cookbooks, The Enchanted Broccoli Forest by Mollie Katzen. Every page you turn to has a recipe you want to try – 289 pages of delicious vegetarian dishes that i’m slowly getting through. I’ve said it before, this book deserves to be in everyones cookbook collection.

This is a flavoursome pie with a simply stunning pie crust that I know you will make more than once. Every time you walk past a bunch of silverbeet or spinach, this pie base will pop into your head with an endless list of fillings to try it with.

Spinach Pie Crust – Vegetable Pie Crust is a fantastic recipe for when you want to mix it up a little.

This is an adaptation from one of my most favourite cookbooks, The Enchanted Broccoli Forest by Mollie Katzen. I haven’t strayed too far away from the original but I HIGHLY recommend getting a copy of this book if you want more stunningly beautiful and simple recipes.

I will be making the mushroom and yoghurt pie from this book using this pie base, as suggested, but through pot luck I had about 1/2 cup of mixture left over so decided to make some Savoury Spinach and Parmesan Biscuits… Stunning! and a great addition to cheese board or Charcuterie platter.

Cauliflower in a Coconut Curry…Years ago I was given an Indian cookbook by my sister, 1000 Indian Recipes by Neelam Batra. It’s by no means a beautiful coffee table cookbook – there isn’t one photo in it, but a tome to 1000 Indian recipes. I have so many bookmarks in it and I’m slowly getting through them, but this one gets cooked the most. Cauliflower in a Coconut Curry is traditionally done with the whole head of cauliflower kept in tact. It certainly is a show stopper when done this way, but for an easy family meal, cutting it into smaller florets makes it a lot easier to manage.

It’s not strict to the recipe, only because I was missing a couple of ingredients (I replaced the 1/2 cup of yogurt and 1 cup of water with 400g of coconut milk and omitted the coriander and nutmeg) Both are equally amazing but have to admit that this version is OUTSTANDING! It will all depend on whether you feel like a tangy, yogurt base or a creamy coconut base.

Make a Indian flat bread such as a Paratha to help sop up all the delicious curry sauce.

Blondie’s Cauliflower Recipes… At $1.75 for a head of cauliflower, you really can’t go past seasonal produce for price and quality. This can easily feed a good size family!
So with my cauliflower sitting on my bench I wanted to try some new recipes. I love my gratins and curries but needed something new.

I came across Cauliflower Rice, what a fantastic idea!

Rich in nutrients, low in calories and high in dietary fibre this a vegetable that is probably forgotten as it’s not a vibrant, lively colour or maybe it appears awkward to cook with, but with a beautiful texture and flavour this should really be included into your weekly meal plan.

Stir Fried Cauliflower ‘Rice’ – This would have to now be my most favourite and changeable dishes. No mater which country’s cuisine you are cooking, you will be able to alter this to the flavours of that country. I’m having Mexican tonight so have gone with chillies, tomatoes and paprika but if you wanted Italian flavours then throw in some basil, thyme and maybe some salami or sausage. Add egg or tofu for a protein hit…So easy and adaptable!

Kids Cauliflower Rice – an amazing way to get more nutrients into your kids meals. When cooked with rice, the blitzed cauliflower resembles rice grains. If you have an overly picky eater and they love Jasmine rice then the flavours combine completely and they won’t even know that they are eating far more than they ever suspected!

Ridiculously Rich Dark Chocolate Sorbet, the title is no joke, It truly is ridiculously rich!

If I were to choose my favourite flavour combination for dessert it would have to be strawberries and chocolate… strawberries dipped in chocolate, strawberry filled chocolates etc. Actually, no, Chocolate and mint would be my favourite, wait, no… coffee and lemon. Damn! I’ve got alot of sorbets to make 🙂

Anyway, this is a great start to my sorbet odyssey as they are very simple to prepare and great to have on hand. You could make this a little more adult by adding your favourite liquor – there is already vodka in it to stop it from setting rock hard but also add cointreau for a choc orange flavoured sorbet or add a hazelnut liquor.

Divide the pre frozen sorbet into small batches and you could make an endless flavour combinations to tease your friends with… the flavour combinations are truly endless.

Zucchini Koftas in Creamy Tomato Sauce is an insanely moresih kofta recipe – it really is hard to stop eating these deep fried zucchini balls. The recipe does call for the zucchini koftas to warm in the sauce but when I do it again I will serve the sauce on the side (or underneath) the kofta balls so I keep the texture of the balls, which soften when sitting in the sauce.

This meal is also kid friendly – there is chilli in it so just remove or reduce it if they aren’t a fan of heat, but they will most certainly love the zucchini balls.

TIP: since the koftas really need to be eaten immediately (they go a little soggy otherwise, but still tasty) turn the leftovers into sausage rolls – these are absolutely stunning! Mix the balls and remaining sauce together with some paneer or ricotta and roll up in puff pastry. This way you get the texture and the flavour just in a different form.

My household is still going strong with our 3-4 days worth of vegetarian days a week and it’s been really exciting coming up with recipes to excite and engage… this one is no exception as it has the naughtiness of deep fried food and the lushness of the creamy tomato curry sauce. I have also included a recipe for Paneer Parathas, which are an Indian stuffed bread, just perfect for dunking into the sauce.

The Easiest Banana Bread Ever w/ Lemony Cream Cheese Frosting… So the question of what to do with old bananas would pop into most peoples minds at some point while they look at their decaying fruit. A bright spark of an idea will envelope them as they remember that they love banana bread and surely it can’t be too difficult to make…

Bella and I are both guilty of leaving bananas too long on the bench and having them eventually end up in the garbage, but no longer! I will forever now be making banana bread because this recipe is so, so simple. You just bung all the ingredients into the food processor and blitz, spray your bread tin and throw it into the oven for one hour – and what an hour it is. The house fills with the aroma of freshly baked banana bread, scented with vanilla and cinnamon that lingers hours after the baking has finished.

The Easiest Banana Bread Ever w/ Lemony Cream Cheese Frosting is a moist, dense cake that has a fine crumb and holds it’s self well to toasting or eating fresh. It will keep in your fridge for ages, just lightly cover it and if you want the feeling of freshly baked banana bread then pop a thick slice into the microwave for 5-7 seconds and it bounces back to it’s old self – moist and slightly warm, yum!
