Slice the cucumber as thinly as you can either using a mandolin or a very sharp knife.
Lay sliced cucumber on a sieve or strainer and sprinkle with salt, ensure that the cucumber is spread around evenly and the salt covers all the slices.
Leave the cucumber to mix with the salt for about 30 minutes, the salt with extract excess water / juice.
After 30 minutes squeeze out any of the excess juice with your hands and the cucumber to a bowl and mix with the yogurt or sour cream.
Sprinkle with freshly cut dill and pepper.
