Ingredients
1/2 cup melted butter
2/3 cup brown sugar
2 Tbs maple syrup or honey. I prefer maple syrup
2 Tbs golden syrup
1 cup plain flour
1 cup rolled oats
1/2 cup shredded coconut
1 Tsp bi-carb soda
2 Tbs boiling water
Method
- Preheat oven to 180ºC
- Combine melted butter with brown sugar, maple and golden syrup
- Add flour, oats and coconut
- Mix bi-carb soda with boiling water, it will froth up but that’s OK
- Combine soda mixture with biscuit mixture, it will resemble a crumble topping
- Roll tablespoon of the mixture into balls and place on baking tray, spacing these apart as they do expand when they bake. Press down slightly with fork of palm of your hand
- Bake in oven for 12 minutes
