Ingredients
Large bunch of basil
2 garlic cloves
1/2 cup parmesan cheese
3/4 cup unsalted cashew nuts
1/4 – 1/2 cup rice bran oil – or similar neutral flavour oil
pinch of salt to taste
Method
Wash the basil and remove the leaves from the stems. Place in to a food processor.
Add the nuts, garlic and cheese and blitz for a couple of seconds. Slowly drizzle in the oil till you get to the consistence you want. Remember, you don’t need to have it too runny as you can always add cream or more oil when using it in a pasta sauce.
Taste the pesto and add salt if required.
