Who can resist a cookie, especially a large cinnamon and nutmeg scented one with sweet raisins dotted throughout? Certainly not me.
I don’t really have a sweet tooth and a mid morning snack is usually of the savoury kind but these have really been hitting the spot of late – a nice coffee and half of one of these cookies has been the perfect 11:00am breather.
A really nice idea is to keep some for yourself and then give the rest as gifts… maybe friends, your neighbour or your kid’s school teacher?

Ingredients
2 cup plain flour
½ tsp bicarbonate soda
½ teaspoon salt
¼ tsp freshly grated nutmeg
1 tsp cinnamon
170 g unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
2 eggs
1 tbs vanilla essence
2 cups rolled oats
1 cup raisins
Method
Pre heat oven to 160°c / 320°f
In a large bowl mix the flour, bi carb soda, salt, nutmeg and cinnamon. stir till well combined.
In another bowl beat together the melted butter and both sugars for 1 minute.
Slowly add the 2 eggs and the vanilla, beating till light airy – about 3 minutes.
Add the butter mixture to the flour mixture and quickly fold in till just combined.
Add the oats and the raisins and mix till just combined.
Use a 1/4 cup measuring cup to make large balls and place on a tray lined with baking paper.
Cook for about 25 minutes and then enjoy with family and friends.
