Farm cheese – ingredients and items required
600 mls of buttermilk

Method:
Pour milk into sauce pan, bring to about 60 °C. You will start to see the milk split and curdle:
Pour the curdled mixture into a cheese cloth lined sieve and let it strain over a sauce pan. This takes approx 20 minutes.
Bring all four ends of the cheese cloth together, wrap around into a ball, not too tight. I let my cheese mixture hang suspended over a wooden spoon in the sauce pan (home made contraption).
I then pop it into the fridge for about 2-3 hours so that more of the water drips out. Overnight is OK too.
