Ingredients
200 g good quality dark chocolate
200 g salted butter
3 eggs
2 egg whites
220 g caster sugar
115 g plain flour
40 g cocoa powder
Method
- Preheat oven to 160ºC.
- Melt butter and chocolate over a water bath. Ensure that the bowl does not touch the water otherwise your chocolate will turn grainy and solid. Allow chocolate mixture to cool down.
- Whisk eggs with egg whites until pale and fluffy.
- Add egg the egg mixture to the cooled chocolate mixture.
- Sift flour and cocoa powder and add sugar. Fold in the chocolate mixture however do not over mix.
- Bake for 45 minutes for soft gooey brownies
