Nothing beats a quick serve dinner, whether it be mid week or on the weekend. With the flavours bursting through in this bowl people will think that you slaved away in the kitchen for hours.

Ingredients
500g pork mince
1 onion, finely diced
2 tsp ginger, grated
2 garlic cloves, grated
1 tsp sesame oil
2 tbs brown sugar
2 tbs fish sauce
2 tbs white vinegar
2-4 red chillies, depending on heat level you want. Sliced on the diagonal
2 spring onions, sliced on the diagonal
Salad*
1/2 cucumber, deseeded and cut into batons
1/2 cup shredded carrot
several handfuls of lettuce leaves or baby spinach leaves
*If you are short on time then buy a pre made salad mix with spinach, carrots, cabbage etc.
3 tsp of sesame seeds or a seed mix to sprinkle over the top
1 lime, squeezed over the top at the end
3 cups jasmine rice, cooked
METHOD
Heat some oil in a pan and cook the onion for a couple of minutes. Throw in the garlic and ginger and cook for 30 seconds.
Place the pork mince into the pan and cook on a medium to high heat. Gently break up large pieces but try not to move it around too much as you want to keep a chunky texture to it rather than small crumbs.
Add the sesame oil, fish sauce, vinegar and sugar and do a quick stir. Leave to cook for a couple of minutes. Throw in the spring onions and chillies and stir again briefly till the pork is completely cooked and well browned.
Serve with rice topped with salad then topped with the pork mince then sprinkle over the seeds. Pile it high and enjoy.
