Bunch of green grape tomatoes, enough to fill 2-3 small jars
1 cup apple cider vinegar
1 cup water
1/2 cup white sugar
Pickling spices – per jar
2 cm slice of dried chilli for each jar
12/ tsp yellow mustard seeds
1/2 tsp back mustard seeds
1/2 tsp celery seeds
1/2 tsp black peppercorns
1/2 tsp whole all spice
1-2 cloves per jar
a bay leaf for each jar
Method
Pick the grape tomatoes off the stems, wash and pop them into the jar with the pickling spices at the bottom. Use jars that have been sterilized.
Ensure that each jar is firmly packed to the top.
In a saucepan bring water, vinegar and sugar to the boil and pour the mixture into each jar, seal the jar and pop it into the fridge. They will keep for 2-3 weeks.
