Ingredients
4 potatoes (2 per person if you want to cook for more people)
1/2 tsp smoked paprika
1/2 tsp sweet paprika
1 tsp salt
1 tbs butter, melted
1 tbs oil

METHOD
Pre heat to 220°C / 440°F
Place the whole potatoes into your diable potato baker and cook in the microwave for 4 minutes. Remove and pierce each potato with a skewer to see if they are done. Remove the ones that are tender and cook the other ones for a minute or two longer.
If you don’t have a diable then wrap each potato in paper towel and cook as above – after the initial 4 minutes, test and then cook in 1-2 minute increments till done – it’s very easy to over cook potatoes in a microwave.
Mix together both of the paprikas, salt, butter and oil and set aside.
Let the potatoes cool down enough to handle then with a sharp knife cut slits about .5cm apart, making sure not to touch the bottom.
A great tip for cutting the slits is to place a chopstick on either side of the potato and then cut.
Fan out the slices a little and then brush on and in between the slices the paprika mixture.
Place into the hot oven for 15 – 20 minutes
