These are truly amazing little treats to have on hand for when you need a little energy boost… and fantastic for primary schools as they are free from most things that some kids are intolerant to – There is always one in a class and it’s a shame that they always miss out on treats.
Ingredients
2 cups desiccated coconut
10-12 Medjool dates or 20-22 smaller dates
1 tbs cocoa
1 tbs coconut oil
1 tbs water – if necessary
Method
Deseed the dates and then place all ingredients – except the water – into a food processor and blitz till it comes together.
Add the water if you need a little more moisture to bring it together.
Pour the mixture into a square tray and press it down firmly. You can also use a mini cakes tray if it has a pretty designs.
Place in the fridge to set.
Once firm, slice into squares.
