Beef & Mushroom Meatloaf w/ Roasted Garlic

Ingredients

1 kg beef mince

1c finely chopped mushrooms

1 carrot, grated

1 onion, finely chopped

3 garlic cloves, minced

2 eggs

1 tbsp french mustard

3 tbsp tomato sauce

1 tbsp Worcestershire sauce

1/2 c dry breadcrumbs

1/2 tsp salt

1/2 tsp pepper

1 head of garlic

1 tsp olive oil

pinch of salt

Beef & Mushroom Meatloaf w/ Roasted Garlic

Method

Pre heat oven to 180°C / 350°F

Slice the top portion of the garlic so you can just see the cloves, place into a garlic roaster or mini cast iron pot and drizzle with the oil and sprinkle with salt. Place on lid and pop into the oven on a low shelf.

Place the rest of the ingredients into a bowl and mix well with your hands. Once well incorporated then lightly press mixture into a loaf tin.

Cook, uncovered, in oven for about 30mins or till cooked through. A meat thermometer will show as 65°C / 160°F. Remove and leave to rest for about 10 min before slicing.

Remove the garlic and serve with the garlic on the side to squeeze over your sliced meatloaf.
