Ingredients
4 cloves of garlic, peeled and thinly sliced
3cm piece of ginger, peeled and thinly sliced
1 onion, finely sliced
1 spring onion, finely sliced
1 Lap cheong (chinese sausage) sliced
1 whole chicken cut into 8 pieces
200g english spinach, roughly chopped
2 tbs vegetable oil
Sauce
50ml water
1/2 tsp salt
1/2 tbs white sugar
3 tbs mushroom sauce
1 tbs sesame oil
1 tbs dark soy sauce
2 tbs sweet sherry
Method
Have all elements sliced up and ready to go.
Heat some of the oil in a pan and fry the garlic. ginger, onion. spring onion and the chinese sausage for 2 minutes. Remove from the pan and set aside.
In the same pan as used with the onions, heat a bit more oil and brown the chicken pieces well.
While the chicken is browning, mix all the ingredients for the sauce together and set aside.
Once the chicken is completely browned add the onion mixture back to the pan.
Add the sauce mixture to the pan and then throw in the english spinach, stirring to combine well.
Cover and leave to cook on a low simmer for 20 minutes or till the chicken is completely cooked through.
Serve over rice with a couple of pieces of chicken and a drizzle of that delicious sauce and the wilted spinach.
