This is a super quick tasty one pot meal that feeds the whole family with minimal effort. Add more potatoes if you like as they are the mop for all that delicious gravy.
Ingredients
6 chicken thighs, skin on and bone in
1.5 cups of chicken stock
1 tsp salt
1 tsp pepper
12 chat potatoes
10 garlic cloves, peeled and lightly smashed
1/2 punnet of cherry tomatoes
8 sprigs of lemon thyme
1 lemon, cut into small wedges
oil for cooking the chicken
Method
Pre heat oven to 180°C / 355°F
Heat a little oil in a small handle skillet or another pan that can go into the oven.
Cook the chicken till golden and brown.
Add the salt and pepper to the chicken stock and then pour into the pan.
Throw in all the other ingredients; potatoes, garlic cloves, cherry tomatoes, thyme and lemon and place in the oven, without a lid and cook for 30 mins or till the potatoes are tender.
Remove from the oven and taste to see if more salt is needed.
