Ingredients
1/2 cup chilli powder (you could purchase this if you prefer or make with the following recipe)
1/4 cup paprika
1 tbs smoked paprika
4tsp dried oregano
2.5 tsp ground cumin
2.5 garlic powder
1.5 tsp onion powder
2 – 5 tsp cayenne pepper – depending on heat intensity
The rest of the seasonings
2.5 tsp garlic powder
2.5 tsp onion powder
2.5 tsp dried oregano
2 tsp smoked paprika
1 tsp ground coriander
1 – 2 tsp cayenne pepper – or to taste
3 tsp ground annatto (optional)
4 tbs paprika
4 tbs ground cumin
2 tbs crushed sumac
2 tbs tomato powder
2 – 4 tsp salt (best to keep it a small amount as you can always add it to the dish later)
3 tbs cornflour
Method
Mix all the ingredients of the Chilli Powder and set aside.
Mix all the other ingredients in a large jar and then measure out 1/2 cup of the Chilli Powder. Mix or shake till all the seasoning is completely combined.
This will last for about 6 months after which it will start to lose it’s intensity and flavour.
How to use Taco and Fajita Seasoning – Big Batch …
Cook your meat or veggies and then add 2 tablespoons of seasoning the the pan with about 1/4 to 1/2 a cup of water.
If using shredded meat then make up the seasoning sauce first and bring to the boil before adding your already cooked meat.
