Ingredients
Banana bread
2 large bananas – very ripe
125g unsalted butter – room temperature
1 cup caster sugar
2 eggs
100ml buttermilk
1 tsp vanilla essence
225g self raising flour
1 tsp ground cinnamon
1 tsp ground ginger
1/2 tsp bicarbonate of soda
Lemony cream cheese frosting
250g cream cheese
65g unsalted butter
2 tbs lemon juice
1 tsp vanilla essence
800g icing sugar mixture
Method
Pre heat oven 180°C / 360°F and grease a rectangular bread tin. Cut some baking paper to line the base and then set aside.
Place the banana, butter, buttermilk, eggs, caster sugar and vanilla in to a food processor and process for 2 minutes.
Add the flour, bicarbonate of soda, ginger and cinnamon and process till just combined.
Pour this into your prepared bread tin and cook in the oven for 1 hour or till a skewer comes out clean.
Leave to cool completely before topping with the cream cheese frosting.
Lemony Cream Cheese Frosting
Makes about 4 cups but can be halved
Freezes well
Beat the cream cheese, butter, lemon juice and vanilla till smooth.
Add half of the icing sugar and mix well.
Add last half and mix well.
Add more juice or icing sugar till you get the consistency you want.
